The Insider has been slowly perfecting the art (and science) of baking sourdough bread at altitude. A gratifying process to be sure - and good to have fresh, non-processed bread in the house - it does take some experimenting to work out all of the details that produce a quality loaf of sourdough bread (water source, type of flour, temperature at which to proof as well as bake, to name a few).
If you aren’t into the flashbacks to your high school chemistry class days, or if you don’t have a spare dutch oven laying around, taking up space on your range top for decorative purposes, there are several options in the valley to access the health benefits of fresh sourdough bread .
“Commercial” bakeries such as Avon Bakery & Deli, Hovey & Harrison, and Michel’s Bakery (who retails their products at the R Market in Avon) are great options if you want a loaf quickly - just make sure you go early in the day!
But if you are willing to place an order and wait a few days there are a few independent bakers in the valley that produce truly homemade deliciousness:
Alpen Dough - a self described “cottage micro bakery” with pick up in Edwards.
Crust and Culture Bakehouse - another Edwards based independent bakery with some very tasty options/variations.
Bake House on 3rd - located in Eagle, and making sourdough cinnamon rolls in addition to bread
While the Insider has no intention of competing with any of these amazing providers, our heart is with the independent bakers - it’s a labor of love and we are happy to support them!
The professional secret to dough is out
Ever tried to make dough in your regular mixer?
The results aren’t pretty: Clumpy texture. Stodgy bread. Overheated motors.
So, how do the pros get it right?
Introducing Ooni Halo Core Spiral Mixer.
Its secret is the same dough-making technology that professional bakers have used for decades.
Until now, most spiral mixers have been industrial-sized machines with industrial-sized price tags.
They also only made dough. And that gets a no from us.
To put the same professional tech into the hands of home bakers, we rebuilt the spiral mixer — creating a mighty little machine that can whip, beat and knead to professional high standards.
